Chocolate Ārepa Brain-ie Recipe

 We partnered up with the kitchen magicians from HnT kitchen to bake us something deliciously indulgent to curb those chocolate cravings this weekend. 

Inspired by decadent dark chocolate and our delicious Neuroberry blackcurrants, we present our Chocolate Ārepa Brain-ies.

 

Brownie ingredients: 

190g butter
200g coconut sugar
190g Whittakers 72% dark chocolate
5 eggs
190g almond meal
45g cocoa,
2 tsp Heilala vanilla,
1 tsp Himalayan salt

 

Blackcurrant deliciousness: 

1.5C frozen blackcurrants
100g cream cheese
4 Tbsp Arepa brain powder
1 Tbsp coconut sugar
1 Tbsp cornflour mixed with a little water

 

Blackcurrant Method: 

Simmer blackcurrants & 1 Tbsp coconut sugar until hot, add cream cheese to melt and then slowly pour in cornflour to thicken (stirring constantly to avoid lumps).

 

Brownie Method:

  1. Preheat oven to 160C & line a 23cm x 23cm tray with baking paper
  2. Melt butter and chocolate together, add vanilla and mix
  3. In a large bowl place all dry ingredients
  4. Lightly whisk eggs
  5. Mix, dry ingredients, melted chocolate and butter, and eggs; until just combined.
  6. Pour into brownie tray, then gently pour over the blackcurrant cream cheese couli  & swirl with your spoon.
  7. 7. Bake for 35 minutes or until a skewer comes out (just) clean. Don't overcook - its better under than over.
